Cacao Barry have been a pioneer for over 160 years. In 1842, Charles Barry, a merchant in the tea and coffee industry and a true chocolate lover, decided to go to Africa in order to select exclusive cocoa beans that would enable him to create his very first connoisseur's chocolate.
Expanding into Latin America, Cacao Barry® soon perfected the art of transforming raw natural ingredients into the most refined and delicate cocoa and chocolate products.
Creator of exclusive products such as Pailleté Feuilletine, chocolate pistoles or Mycryo® cocoa butter, Cacao Barry fosters baker's creativity of pastry chef's and home bakers who seek top quality ingredients. Cacao Barry has also partnered with Gaston Lenôtre emporium for over 40 years. A dedicated line of chocolate couvertures and pralinés were developed and bear the name. Those products are available for special order.

Cacao Barry has established a Chocolate Academy centres and Ambassadors Clubs worldwide in which a team of passionate and dedicated chocolatiers and pastry chefs share their knowledge and expertise to address the needs of other craftsmen and to develop new products. They contribute to the transmission of precious techniques and knowledge about one of the most beautiful ingredients. The two most recent centre openings are in Mumbai, India and Chicago, US.

In 2013, Cacao Barry® discovers specific ferments naturally present in the local plantation environment (plant leaves and soil) that have a beneficial impact on the fermentation process. This results in Q-Fermentation: a fermentation process during which intense and pure flavours are being released by each bean. This new technique is currently applied to most Cacao Barry couvertures.
Cacao Barry also manufactures an Organic Fair Trade dark chocolate and milk couvertures without lecithin.
