Muina, a Basque term that means "core". Muina is a project lead by Josean Alija where he shares knowledge, research and practices what he defines a "complete dinning experience". Alija enables the creative process to be viewed as a journey to the source of things, to their roots, allowing their true potential to be developed fully through the description of rounded, complete and pleasurable sensations.

Alija concepts live on a daily basis at the "Nerua", the signature restaurant of Guggenheim Bilbao Museum.The Nerua project provides an outlet for the talent and sensitivity of an exceptional chef, in order for Josean to be able to express his personal and particular view of cuisine; a way for him, through his successes and errors, to create a personal language and a different style of cooking that is not caught up in fashions, while allowing him to be influenced by the times without losing the essence of who he is, in the knowledge that developing his own message is a process in constant evolution and with results that are far from certain. He is ultimately aware that it is the most difficult road to take.

Josean Alija (1978) began his career at age 17. Under the tutelage of the great contemporary masters of French and Bastian restoration, has managed to cultivate her own style. A purist in which aromas, textures and flavors are principal components, but also cutting-edge style that even chef Paul Bocusse identified as "one of the best kitchens in his life."

His cuisine and has been recognized with multiple awards. Best Young Chef Award in 2000, Best Chef Golose IdentitĂ  International in 2009 and conceptual Innovation Award in 2010 among others.
