República del Cacao was born with purpose of rescuing and developing the production of “Cacao Arriba”, a native Fine Aroma Cocoa variety from Ecuador and one of the most valued kinds of cocoa in the world, due to its unique taste and aroma, especially in chocolate production. Nowadays, República del Cacao works directly with over 1.800 small cocoa producers from Ecuador, that care and protect small “Cacao Arriba” plantations, whose cocoa is used to produce Ecuadorian single origin fine chocolates. The focus of our commitment with native Fine Aroma Cocoa in Latin America extends towards the search, of new, and sometimes forgotten, varieties from the Andes, the high Amazon basin, Central America and the Caribbean. A big component of this collaboration has been centered in the research and development of traditional harvesting, sun-drying and fermenting methods as well as plantation management techniques that are combined with modern monitoring and control systems that allow us to access a chemical free, pure origin and top quality fruit.
