SousVide Supreme is a water oven designed to cook food following the sous vide cooking technique.

Sous-Vide, a French word which means "vacuum" is a cooking method that seals and preserves food flavor and juices. Sous-Vide technique consist in two phases: the preparation of food products which are in sealed in bags without air using a vacuum sealer and then food which is being vacuum sealed previously is set to be cooked in a water bath at a constant temperature which varies depending on the type of food to be cooked. Sous Vide was put into practice in the late sixties to improve the conditions of meat products. The butcher George Pralus proposed this technique to Troisgros brothers in Roanne, France who sought to improve the cooking of foie gras.

During the seventies, this technique remained in the culinary labs until the early 80's where Joël Robuchon and Pralus worked together and perfected this method in order to get the right temperature and time determined by the cooking point each food was subject to this technique. Unlike other cooking methods and when properly done, sous-vide ensures homogenous cooking and a silky-smooth texture throughout the entire food product which is not possible to achieve with other cooking methods. Sous-vide is probably the cooking method that better maintains the integrity of ingredients and their organoleptic qualities.

Sous-Vide has spread in the last decade but still is a technique used in haute cuisine, one reason being the high cost of vacuum equipment and water circulators as well as the dimensions of each unit.
