We share you the secret. They are so easy to make. No cookie dough chilling necessary. Spritz cookies are buttery, sweet, and they hold their intricate shape when baked. INSTRUCTIONS Into a STAUB 4-QT ROUND COCOTTES melt butter over medium heat. Add onions. Sprinkle with sugar. Stir to coat and arrange into as single a layer as possible. Allow to cook until onions are golden and start to caramelize, stirring as little as possible for approximately 30-45 minutes. Add flour. Stir to combine. Add Marsala, beef stock. Season with salt, pepper and thyme. Stir to combine. Reduce heat to low and simmer for approximately 15-20 minutes, stirring as necessary. Preheat broiler. Toast baguette slices. Ladle soup into ramekins. Top each with a toasted baguette and grated cheese. Return to broiler just until cheese has melted. Garnish with additional thyme if desired. |

Since this week is National Burger Day, we bring you this fun recipe of Chicken Fajita Burgers with Chipotle Guacamole, a delicious twist to traditional burgers that you can make at home with a good Guacamole if you’re an avocado lover.

In a dry 10” signature skillet, heat the chipotle pepper over low heat until fragrant, about 2 to 3 minutes. Remove from the heat and let it cool. Carefully seed the pepper and roughly chop. Place in the bowl of a food processor fitted with a metal blade, and pulse until finely ground.
Measure out 1 teaspoon of the chipotle powder and place in a small bowl. Add the avocado, shallot, garlic and lime juice, and stir to combine. Season with salt and pepper.
To prepare the burgers, in a large mixing bowl, combine the breadcrumbs, egg, chili powder, paprika, cumin, oregano, onion powder, salt, pepper, garlic powder and cilantro. Add the ground chicken, and gently stir to combine. Form chicken mixture into four patties about 1/2-inch thick and set aside.
In a 10” skillet over, heat 1 tablespoon of canola oil over medium-high heat. When the oil is hot, add the onion. Saute until the onion is starting to brown and soften, about 3 minutes. Remove from the skillet and place on a plate. Add the bell peppers to the skillet. Saute until the peppers are starting to brown, another 3 minutes. Remove from the skillet and add to the onions. Turn heat down to medium-low.
Add another tablespoon of oil to the pan and add two of the patties to the skillet. Cook until browned on both sides are cooked through, about 8 minutes. Remove from the pan and set aside on the plate. Repeat with the remaining two patties.
Toast the rolls or pita pockets. Serve the burgers on the buns and top with guacamole, onions and peppers.

A veggie-stuffed omelet makes for one easy, satisfying dinner when paired with a simple side salad. While the cooked spinach mixture sits, it may give off some more liquid; strain this off to keep the omelet from becoming watery.
1 tablespoon extra-virgin olive oil, 1/2 cup chopped shallots, 3 garlic cloves, minced 1 (8-ounce) package sliced white mushrooms, 1 thyme sprig, 6 ounces fresh baby spinach, 3/4 teaspoon kosher salt, divided; 3/8 teaspoon freshly ground black pepper, divided; 8 large eggs, divided; 1 tablespoon butter, divided
Step 1
Heat a medium nonstick skillet over medium-high heat. Add oil to pan; swirl to coat. Add shallots, garlic, mushrooms, and thyme; sauté 7 minutes or until mushrooms are browned. Add spinach; sauté 4 minutes or until liquid almost evaporates. Remove mixture from pan; discard thyme sprig. Wipe pan clean.
Step 2
Combine 1/4 teaspoon salt, 1/8 teaspoon pepper, and 4 eggs in a small bowl, stirring with a whisk. Return pan to medium heat. Add 1 1/2 teaspoons butter; swirl to coat. Add egg mixture; cook 1 minute. Lift edges of omelet with a rubber spatula, tilting pan to roll uncooked egg onto bottom of pan. Cook 1 minute or until center just begins to set but is still very soft. Arrange half of mushroom mixture over middle of omelet; sprinkle with 1/4 teaspoon salt and 1/8 teaspoon pepper. Run spatula around edges and under omelet to loosen from the pan; fold in half. Slide omelet onto a plate. Repeat procedure with remaining ingredients. Cut omelets in half.

1/4 cup powdered sugar
1/4 cup butter, melted
1 cup of wheat flour
1 teaspoon of baking powder
3/4 cup milk

Preparation
Beat the egg, powdered sugar and butter until the mixture is smooth. Add the wheat flour and baking powder, alternating with the milk while continuing to mix. Heat the pan and melt a teaspoon of butter. Write the initial with the mixture on the pan upside down. When the letter cooks a little, pour over that amount of mixture needed to make a pancake. As bubbles form on the surface, it is time to flip it over. Serve with honey or maple syrup.

Today we want to share with you a magnificent homemade pasta as an easier and healthier option which can be made at home using the KitchenAid 2-Piece Pasta Cutter Attachment Set
Flour and eggs are all it takes to make delicate strands of homemade pasta. The best? you do not need to be an expert to try our three ideas for flavored pasta.
On a clean work surface, using your hands, mix together the flours. Form a mound with the mixed flours and create a well in the center. Crack the eggs into the well. Using a fork, gently begin to beat the eggs, mixing in a tiny bit of flour with each stroke. (Protect the well by using your non-beating hand to build up the flour around the edge as you beat.) As the dough begins to thicken and most of the flour has been added, start to stir the dough. When the dough can no longer be stirred, use your hand to mix in the remaining flour, kneading until firm and elastic. Cover with a clean towel; let rest 20 minutes.
On a lightly floured surface, roll dough into an 18-inch circle about 1/16-inch thick. (Be patient. This will take some time and muscle!). Be sure to roll from the center out. The dough is thin enough when you lift it and you can start to see your hands underneath. Lightly flour the surface of the dough. Starting from the side closest to you, loosely roll into a spiral. Cut into strips 1/4- to 1/2-inch wide. Unroll strips to separate. Sprinkle lightly with flour. Let stand 1 hour.
Cook in a large pot of boiling, salted water 2 to 3 minutes or until tender; drain well. Serve with desired sauce.
Spinach: 1/2 of a 10-oz. pkg. frozen chopped spinach, thawed, squeezed dry, and finely chopped.
Roasted Red Pepper: 1/2 of a roasted red sweet pepper, pureed until smooth (about 3 tablespoons).
Add these flavor additions along to the well with the eggs. If too wet, mixture may need a bit more all-purpose flour. Herb: 2 Tbsp. chopped fresh herbs such as parsley, basil, rosemary, sage, oregano, or thyme.
