Shun Classic stunningly beautiful line of cutlery features the look and benefits of Damascus steel, yet without its rusting problems. The Damascus-look blade profile reduces sticking and results in less damage to the food being cut and faster prep times.
Shun Premier line combines an authentic Japanese hand hammered look with the quality and performance that Shun is known for. The blade is made of VG10 steel clad with 16 layers on either side of the stainless Damascus, then beveled for lateral stability and precision. Where the steels meet, a wavy line called a “hamon” is formed. The hammered finished is known in Japanese as “tsuchime” and adds a striking appearance to the knife and also acts as hollow ground cavities that reduce drag and quickly release food from the blade.

The Shun Sora Paring Knife is part of the exciting Shun Sora line that provides exceptional handcrafted Shun quality at an amazing price. Sora uses Shun's proprietary Composite Blade technology to bring together a VG10 san mai cutting edge with a Japanese 420J stainless steel upper. This technology puts high-performance material exactly where it's needed—on the edge. The two blade sections are laser cut, then fit together like pieces of a jigsaw puzzle. Braze welding permanently joins them. The attractive wavy pattern at the joint is based on traditional Japanese sword hamon lines. While Sora's blade shapes and handle design are traditional Japanese, the textured PP/TPE polymer blend handle material provides a contemporary look, secure grip and balance, and is easy to maintain.

The Sora Paring Knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.

Shun's Combination Whetstone offers you two grits: a fine 1000-grit side and an even finer 6000-grit side. Since you won't want to let your Shuns get too dull before sharpening, this stone is a good choice because it lets you put a keen edge on your Shun with the 1000-grit side, then polish it to perfection with the 6000-grit side. The Shun Combination Whetstone is a double-sided Japanese waterstone. You will need to thoroughly soak this whetstone before sharpening.
