Shun Knife Care Kit Shun Beech Wood Universal Saya - Black - Fits most Shun 7" Santoku's and 8" Chef Knives Shun Hinoki Cutting Board - Small
Shun Knife Care Kit
Our Price: $24.95
The Shun Knife Care Kit has the tools you'll need to help maintain your Shuns in their best condition. Inspired by the style of care and tools traditionally used to keep samurai swords in optimal condition, Shun created a convenient kit designed to help keep your "kitchen swords" in beautiful condition, too.

The Shun Knife Care Kit lets you deal with natural tarnishing, discoloration, and even surface rust to protect your investment in Shun cutlery. The kit provides a selection of tools, from polishing cloths and sticks to a Japanese-style talc ball, all designed to help you remove those little spots that can develop, even with the best of care. Of course, preventative maintenance is the best maintenance. So the first step in keeping your Shuns in top condition is the simple daily care we recommend: use proper cutting technique, cut on an appropriate surface, hand wash in mild detergent, dry thoroughly with an absorbent towel (and especially along the thin cutting edge), and allow to air-dry before storage.

To catch any problems at their earliest stage—when they're easiest to correct—we recommend examining your knives whenever you use them. The sooner you catch a potential problem, the less of a problem it will be. Other than thoughtful preventative care, the Shun Knife Care Kit is your best line of defense in keeping your Shuns performing and looking their best.

Complete instructions are included.
Protect and store your larger Shun knives safely and securely with our Shun Universal Saya. In Japanese, “Shun” (pronounced “shoon” and rhymes with “moon”) is the precise moment during the year when any particular food is at the peak of its perfection. Shun is when fruit is at its sweetest, when vegetables are perfectly ripe, perfectly fresh, and perfectly delicious. Shun is in harmony with the natural rhythms of the seasons. Shun Cutlery proudly takes its name from this Japanese culinary tradition of preparing and eating the very freshest food at the perfect “shun” moment. It is a tradition we live up to every day, making fine kitchen knives that are always at the peak of their perfection, too.
Hinoki is a type of Japanese cypress renowned for its beauty as well as its delicate, natural fragrance. Used in a cutting board, this medium-soft wood “gives” as you cut, helping to preserve the edges of your fine Shun cutlery. Quite simply put, hinoki is the perfect cutting surface for all your Shun knives. This smaller size offers the right cutting surface for your Shuns without taking up too much space in your kitchen.

The wood for Shun’s hinoki products is grown in Japan and is Forest Stewardship Council (FSC) Certified for sustainable forest management practices. In addition, all our hinoki products are made from wood resulting from forest thinning, which is required to maintain healthy growth.

Here are some tips for maintaining your Shun Hinoki Cutting Board:  • Wet cutting board before each use; this helps it resist staining • Wash with mild detergent; towel dry, then let air-dry away from direct sunlight and • Do not put in dishwasher.

Designed to nestle compactly beside your Shun 11-Slot or 22-Slot Bamboo Block, this bamboo Sidecar holds up to 6 Shun Steak Knives—any Shun series. This attractive block is made of easy-to-clean, stain resistant bamboo. Durable bamboo is harder than maple, lighter than oak, and is one of the world’s most renewable resources. Perfect for kitchens with limited counter space, the Shun slimline bamboo block accommodates up to six pieces of Shun kitchen cutlery. There are slots for two larger knives and two for medium or small knives. There's even a slot for the honing steel needed for maintaining your edge as well as one to accommodate kitchen shears. The beautiful bamboo block is durable and easy care. A renewable resource, bamboo absorbs very little moisture, so it doesn’t shrink or swell like other hardwoods, making it ideal for kitchen accessories. The Sora Combination Honing Steel is used to hone your knives, that is, to gently realign the cutting edge of your Shun cutlery. With each use of your knife, the edge naturally bends over just a tiny bit. The edge is still sharp, but the sharpest part isn’t making contact with the food. The answer is honing. It realigns the edge and prolongs the sharpness.

The Sora Combination Honing Steel has two surfaces: a smooth one for everyday honing, and a micro-ribbed one for weekly honing. It has a built-in angle on the handle, which makes it easy to hone your knives to the correct 16° Shun angle.

Shun Fish Bone Tweezers are made for easily removing those tiny "pin" bones from raw fish for the perfect fillet. The tapered, flat tip makes it especially easy to reach in and pull small bones in fish or pinfeathers in poultry. They're also handy for quickly cleaning stems and seeds from fruits and vegetables. All-stainless-steel construction makes them easy to clean. The tapered Shun design provides a secure grip, even when dealing with the tiniest bones. Beautifully embossed with the Shun logo. You will be amazed at the many uses for our multi-purpose shears. Of course, they cut things. In the kitchen, use them to snip herbs, trim asparagus, cut up tortillas, trim beans, open food packages, cut cheesecloth or waxed paper, trim flowers—you get the idea. In other areas of the house, they’re handy for cutting cord, twine, or rope, opening packages or envelopes, and lots more. But Shun Multi-purpose Shears really are multi-purpose tools.

There’s a built-in nutcracker, a jar opener, a bone notch (also very handy when trimming flower stems), a lid lifter, and even two screwdriver tips, one in each handle. They’re great for tightening a loose screw in the kitchen cabinet without having to go to the garage to find a screwdriver.

Shun Multi-purpose Shears have one blade serrated so they can easily cut through even tough or fibrous materials. A non-slip plastic over-mold on the handles makes them comfortable to use as well. And what could make these already handy tools even handier? The blades separate for easy cleaning, then lock together easily and securely for use.

Shun Premier Combination Honing Steel 9-in Shun Kanso Combination Honing Steel 9-in Shun Bamboo Block: 11-Slot
With each use of your knife, the razor-sharp edge naturally bends over just a tiny bit. The edge is still sharp, but the sharpest part isn’t making contact with the food. The remedy is honing with the Shun Premier Combination Honing Steel. The Shun Premier Combination Honing Steel gently realigns the edge of your blade. It offers two honing surfaces: a smooth one for day-to-day honing, and a micro-ribbed one for weekly honing. By honing your edge regularly, you can go longer between actual sharpenings.

While fine European knives can require honing after each use, Shun's harder steel means you can hone just once a week or so, depending on your level of use, of course. The Shun Premier Combination Honing Steel has an angle guide built into the handle, so you can easily hone your knives at the correct 16° Shun angle. The premium walnut PakkaWood handle provides a secure grip and matches the handles of the rest of the beautiful Shun Premier line.

This beautifully crafted folding knife is an extremely handsome accessory, whether carried as a tasteful pocketknife or a personal steak knife. First manufactured in 1896 in Meiji-era Japan, this style of knife is considered to be the first Japanese pocketknife. One of the key characteristics of the traditional Higo-No Kami is that when the knife is closed, part of the blade tang protrudes and can be used like a small lever to open the knife with one hand.

The Shun Higo-No Kami does indeed include the traditional lever for easy one-handed opening. However, Shun has also made a number of refinements on the original design. For example, the traditional knife did not include a locking system. The Shun Higo-No Kami does. A locking liner secures the blade open when in use so it cannot accidentally close, endangering the user's fingers. The VG10 "super steel" blade is slim and razor-sharp, making it perfect for use as a personal steak knife and perhaps provoking a little envy from your dining companions. The Shun Higo-No Kami is six inches long when opened and folds to just three and a half inches when closed. The ebony PakkaWood handle features an inlaid mosaic crest. This slender, lightweight knife fits nicely into a suit pocket and includes a sumptuous leather sheath. Whether purchased for yourself or as a gift, the Higo-No Kami is a possession of understated elegance.
